Complete Method:
Step 1 — Sterilise: Wash jars in hot soapy water; rinse. Keep jars hot until filling (place in simmering water or a 100°C/212°F oven). Simmer lid bands and new flat lids in hot (not boiling) water.
Step 2 — Prepare recipe: Prepare your high-acid recipe (fruit, pickles, jams, tomatoes, etc.) according to tested proportions. Do NOT alter ratios of acid to low-acid ingredients.
Step 3 — Fill: Place funnel on hot jar; fill with hot product to specified headspace (typically 6mm/¼ in for jams, 12mm/½ in for whole fruit). Headspace allows for expansion and sealing.
Step 4 — Remove bubbles: Slide a thin spatula or bubble remover around the inside edge to release trapped air. Recheck headspace; add more product if needed.
Step 5 — Wipe rims: Use a clean damp cloth to wipe jar rims completely clean. Any residue prevents sealing.
Step 6 — Lids: Place flat lid on jar. Screw band to fingertip-tight only — not cranked down. Over-tightening prevents the seal venting correctly.
Step 7 — Process: Lower jars onto the rack in the boiling water bath, ensuring 2.5–5cm (1–2 in) water coverage. Cover and return to a full rolling boil. Start timing once boiling.
Step 8 — Remove: When processing time is complete, turn off heat. Remove lid; let jars sit in water 5 minutes. Lift out jars without tilting; set on a towel with 5cm gaps. Do not press lids or disturb jars.
Step 9 — Check seals: After 12–24 hours, press the centre of each lid. It should be concave and firm — no flex. A lid that flexes ("ping-pong" sound) has not sealed. Refrigerate unsealed jars and use within 3 weeks.
Step 10 — Store: Remove bands; label with contents and date. Store in a cool, dark location. Properly sealed jars keep 12–18 months.
Safety rules (non-negotiable): - Use only tested, approved recipes from trusted sources (USDA, Ball, National Center for Home Food Preservation). Do NOT invent ratios. - Water bath canning is ONLY safe for high-acid foods (pH below 4.6): fruits, jams, jellies, pickles, and acidified tomatoes. - LOW-ACID foods (vegetables, meats, beans) require pressure canning. Using a water bath on low-acid foods can produce botulinum toxin — a potentially lethal, odourless, colourless poison. - Never guess at processing times. Times are determined by food density and jar size. Use tested recipes exactly. - When in doubt about a seal or jar appearance (spurting liquid, off odours, mould), discard without tasting.

Pressure Canning Guide
Type: Preservation Method

Complete Method:
- Prepare recipe according to tested source. Fill hot jars to specified headspace (usually 2.5cm/1 in for low-acid foods).

- Lock lid. Heat over medium-high heat. Allow steam to vent for 10 minutes (this exhausts air, ensuring proper pressure builds from steam only).
- Close the vent. Monitor dial or watch weighted gauge. Process at specified pressure (typically 69 kPa/10 PSI at sea level; increase at altitude per chart) for the full recipe time.
- Turn off heat. Let canner depressurise naturally — do NOT rush this with cooling or removing the weight. This takes 20–45 minutes. Rushing causes liquid loss and seal failure.
- Open lid away from you (steam may still escape). Remove jars; cool undisturbed 12–24 hours. Check seals as with water bath canning.
Altitude adjustment: Pressure must be increased at altitude. Above 600m (2,000 ft): add 34 kPa (5 PSI) using a dial gauge or use the 15 PSI weighted gauge setting.

Fruit Butter Template

Historical note: Fruit butters were a New World colonial tradition — when apples and peaches grew in abundance but sugar was expensive, slow-cooking fruit to concentrate it without added sweetener was an economical way to preserve the harvest through winter.
Fermented Hot Sauce
Type: Preservation (Lacto-Fermentation)
Why ferment? Unlike vinegar-based hot sauce, fermentation develops complex umami and fruity depth impossible to achieve any other way.
Ingredients (makes about 500ml / 1 pint): - 500g (1 lb) fresh hot chillies of your choice (Fresno, cayenne, jalapeño, habanero, or a mix) - 5–8 cloves garlic - 1 tsp sugar (optional — feeds fermentation) - 1 tbsp non-iodised salt (2% brine solution; see below) - Optional aromatics: shallots, carrots, onion
Brine (for topping up if needed): - 1 tsp non-iodised salt per 250ml (1 cup) water — 2% brine
Method: 1. Wearing gloves, stem chillies. Roughly chop along with garlic and any other aromatics. 2. Toss chopped chillies with 1 tbsp salt (2% of total weight). Pack into a clean glass jar, pressing down firmly to expel air pockets. 3. The salt will draw out liquid to create brine. Keep chillies submerged — use a small bag filled with brine as a weight, a zip-lock bag filled with water, or a purpose-made fermentation weight. 4. Cover jar loosely with a cloth or airlock lid. Keep at room temperature (18–24°C / 65–75°F), out of direct sunlight. 5. After 24–48 hours, liquid should cover the chillies. If not, top up with prepared 2% brine. 6. Ferment 5–7 days, checking daily. Skim any white film from the surface (this is harmless wild yeast; discard it). Press chillies down. Taste daily — it will become more tangy and complex. 7. When the flavour suits you (usually 5–10 days), blend chillies and brine until smooth. Add a splash of apple cider vinegar (1–2 tbsp) for brightness and longer shelf life. 8. Strain if desired, or bottle as-is. Refrigerate. Keeps for 6 months or more — the fermentation and added vinegar preserve it.
Historical note: Lacto-fermented hot sauces predate modern Tabasco by millennia; Indigenous peoples of Mesoamerica fermented chillies long before the Columbian Exchange, and cultures across Asia, Africa, and the Caribbean developed their own fermented chile traditions independently.
Refrigerator Dill Pickles
Type: Preservation (Quick / Refrigerator)
These are not shelf-stable — no canning required. Ready in 48 hours.
Ingredients (makes 2 x 500ml / pint jars): - 700g (1.5 lbs) pickling cucumbers (Kirby or small cucumbers, 8–10cm/3–4 in long) - 480ml (2 cups) distilled white vinegar (5% acidity) - 360ml (1½ cups) water - 2 tbsp pickling/canning salt (non-iodised) - 1 tbsp sugar
Per jar: - 2–3 heads fresh dill or 1 tsp dill seed - 2 cloves garlic, smashed - ½ tsp whole black peppercorns - ½ tsp whole mustard seeds - ¼ tsp red pepper flakes (optional) - 1 small dried bay leaf - Optional: grape leaf, horseradish leaf, or oak leaf (tannins keep pickles crisper)
Method: 1. Wash cucumbers thoroughly. Slice off the blossom end (the end opposite the stem — it contains enzymes that soften pickles). Cut into spears, chips/rounds, or leave whole if small enough to fit. 2. For crunchier pickles: toss cucumber pieces with 2 tsp salt; refrigerate 1 hour; rinse thoroughly. This draws out excess moisture. 3. Pack dill, garlic, peppercorns, mustard seeds, pepper flakes, and bay leaf into clean glass jars. Add cucumber pieces, packing tightly. 4. Bring vinegar, water, salt, and sugar to a boil in a saucepan, stirring to dissolve. Pour hot brine over cucumbers in jars, ensuring all pieces are submerged. 5. Cool to room temperature. Apply lids. Refrigerate. 6. Pickles are ready in 24–48 hours. Best flavour at 4–7 days. Keep refrigerated; use within 6–8 weeks.
Historical note: Dill pickles are deeply associated with Eastern European Jewish culinary tradition — fermented cucumber pickles were a ghetto staple in the Pale of Settlement and were brought to New York City by immigrants in the late 19th century, becoming embedded in American deli culture.
